What i prepared today for Pesach
Today is erev Pesach. We are going to our shul for the seder, but I cooked for tomorrow and later in the week. I prepared a 10 pound turkey (easy as pie, if you have 3 hours to leave it in the oven). I made two sheet pans of potato kugel, 2 sheet pans of brownies and a pot of stuffed cabbage using 1/2 a head of cabbage from Bedner's fruit market in Boynton Beach. I am about to make the charoses for tomorrow since I am not allowed to grate the apples on Yom Tov. I have one of the easiest chocolate brownie recipes for Pesach from "the haimishe Kitchen" 4 whole eggs
1/2 cups sugar
1 cup oil
1/2 cup oil
1/2 cup cocoa1/2 cup chopped nuts
3/4 cup potato starch
Mix eggs until yolks and whites are combined, not foamy.Add the rest of the ingredients and mix just until the mixture is smooth. DO NOT OVERMIX. Bake in a 9 by 13 inch pan for 45 to 50 minutes at 350..
I have made this for several years, very popular and you dont have to separate the eggs like so many other Passsover recipes.
